Description
A fillet knife and a butcher’s knife do not need the same edge, which is why an adjustable angle sharpener like this one from 3 Claveles (ref. 09430) makes a difference. Just press and turn the dial to pick the sharpening angle, from 14° to 24° per side, and match the edge to the knife in your hand.
It is a 25 cm manual sharpener with two knife slots, a coarse one with carbide blades and a fine one with ceramic blades, plus a third slot with ceramic rods for scissors. The soft-touch handle and non-slip base keep it steady while you work.
Which angle for which knife
These are the angles suggested by the manufacturer, printed on the product and on the dial:
- 14°–16°: fillet knives
- 16°–18°: Japanese knives
- 18°–20°: kitchen knives
- 20°: pocket knives
- 22°: sports knives
- 24°: butcher knives
Coarse slot, fine slot and scissors slot
Use the coarse slot when the blade is dull or damaged: its carbide blades remove metal quickly. The fine slot, with ceramic blades, removes burrs and polishes the edge afterwards, or can be used on its own when the blade only needs a light touch-up. The angle of both knife slots is set with the dial; the scissors slot has a fixed angle. It works just as well for right- and left-handed users.
How to use the sharpener
- Place the sharpener on a flat surface and hold it with one hand.
- Press and turn the dial to the angle you need; you can follow the values printed on the product.
- Insert the whole blade into the slot, at 90° to the sharpener.
- With light downward pressure, pull the knife from heel to tip. Never push it away from you.
- Repeat 5 to 7 passes through the coarse slot and then the fine one, without alternating between them.
- For scissors, insert the blades on each side of the ceramic rod in the scissors slot, push forward and close the scissors while pulling them towards you; repeat until they cut well.
Specifications of the 3 Claveles 09430 sharpener
A good fit for anyone with several types of knife at home who wants each one sharpened at the angle it deserves. To clean it, a damp cloth or a soft brush is enough; dry it afterwards and do not rinse it under water.
