Description
Santoku knife KAI TDM-1727, 14 cm blade, made in Japan, from the Shun Premier series by KAI.
There is also a larger Shun Premier santoku with an 18 cm blade.
Use
The santoku knife is the Japanese equivalent of our cook’s or chef’s knife. Santoku means ‘three good things’ or ‘three virtues’ — cutting, dicing and slicing. It is ideal for cutting meat, fish and vegetables. The width of its blade makes it handy to use as a scoop to gather up what you have just cut. It is a basic tool in any kitchen.
The blade
The KAI Shun Premier Tim Malzer knives are forged by the master smiths of the Japanese city of Seki in 32-layer Damascus steel, with a hand-hammered finish known as Tsuchime.

The core of the blade is VG-MAX steel, with a hardness rating of 61±1 HRC.
Tim Malzer’s KAI Shun Premier series provides professional cutting tools that set new standards in the high-end segment, delivering exceptional results and a timeless design.
The handle
The handle of the KAI Shun Premier Tim Malzer knives is walnut wood, and the result makes this piece a true work of art.
This KAI Shun Premier series stays true to Tim Malzer‘s principle that a good knife not only makes work easier but also helps you enjoy it. Each Damascus steel knife is crafted with the utmost care and specially adapted for precise use by the Japanese master smiths of Seki. Its symmetry ensures optimal, comfortable use and great precision for right- and left-handers alike.
Presentation
