Description
Some sharpeners are held like a block, others are gripped like a tool: this sharpener with handle and scissors slot by 3 Claveles (ref. 09432) belongs to the second kind. You rest it on the worktop, hold it by the handle and pull the knife through the slots, one after the other.
It measures 25 cm, combines tungsten carbide and ceramic and weighs 190 g. It has three knife slots, numbered 1 to 3, and a fourth slot marked with a scissors icon.
Three steps: prepare, sharpen and polish
Each numbered slot has its own job in the process:
- Step 1, preparation: repairs damaged edges and balances the blade before sharpening.
- Step 2, sharpening: the carbide blades sharpen and restore the blade’s V-shaped cut.
- Step 3, polishing: the ceramic removes burrs and leaves the edge polished.
Work from slot 1 to slot 3 in order; it is best not to alternate between them.
A handle for comfortable work and a slot for scissors
The handle lets you hold the sharpener with one hand while the other guides the knife by its handle. The scissors slot is used separately: place the scissors in scissor position and move the blade from the tip to near the handle, repeating the movement in that direction only.
How to use the sharpener
- Place the sharpener on a flat surface and hold it with one hand.
- With the other hand, take the knife by its handle and insert the whole blade into slot 1, at 90° to the sharpener.
- Pull the knife from heel to tip with light downward pressure; never push it away from you.
- Repeat 5 to 7 times and continue with slot 2 and then slot 3, always in that order.
