Description
The TwinSharp Select stainless steel sharpener from Zwilling (ref. 32601-000) is the metal version of the TwinSharp series: a clean-lined manual knife sharpener that can bring a very dull knife back to life just as easily as give it a fine polish when it only needs a touch-up.
It is designed for the whole family, since right- and left-handed users can both use it, and its silver stainless steel finish is as hardwearing as it is attractive. Designed in Germany, it looks good left out in the kitchen.
Two modules, two jobs
The first module removes the imperfections from the blade’s edge and the second hones it for lasting sharpness. Both use ceramic discs, and the numerals I and II are marked on the base. If the knife is very dull you start with I and carry on with II; if it is only slightly blunt, II is enough.
Angle set at the factory
Unlike whetstones or honing steels, the ideal angle of roughly 35° is already fixed, so you don’t have to hold it by hand and misuse is avoided. You simply pass the blade through the sharpener.
Stability and compatibility
The non-slip rubber feet on the base stop the sharpener from sliding while you work. It works with uncoated straight-edge knives, because the paint on a coated blade would be spoiled. It is not for serrated blades, scissors or single-bevel knives; a double-bevel santoku can be run through it, although the angle is set for Western knives.
How to use the sharpener
Before the first use, read the manufacturer’s instructions carefully. These are the basic steps:
- Place the sharpener on a flat, dry, non-slip surface, resting on its rubber feet, and make sure the knife blade is clean and dry.
- Hold the handle with one hand and press down gently so that the sharpener does not move.
- If the knife is very dull, start with module I and continue with II; if it is only slightly blunt, module II is all you need.
- Insert the blade into the slot with the edge pointing down and pull it with light pressure from heel to tip, always towards your body. Repeat several times.
- Test the result by cutting a sheet of paper.
To clean it, turn it upside down and let the sharpening dust fall out; then use a soft, dry cloth. No water or dishwasher, and do not try to open it.
