Use
The Japanese Nakiri knife (which translates as ‘vegetable knife‘) is designed for cutting vegetables, like the Usuba knife, but lighter.
The KAI TDM-1742 Nakiri knife is very comfortable for cutting vegetables by design: it lets you make quick movements resting the knuckles of the hand holding the food, while the knuckles of the knife hand never touch the board thanks to the blade width.
The blade
KAI Shun Premier Tim Malzer knives are forged by the master smiths of the Japanese city of Seki in 32-layer Damascus steel, with a hand-hammered finish known as Tsuchime.

The core of the blade is VG-MAX steel, with a hardness rating of 61±1 HRC.

Un gran cuchillo que me encanta para trocear cualquier alimento que requiera cortes repetitivos, como verduras en juliana, oriental, etc. Proporciona un corte de precisión sin esfuerzo debido a su impresionante filo en acero de calidad, así como a su buen agarre y reducido peso. Sospecho que me va a durar largo tiempo sin tener que afilarlo. Como inconveniente: el elevado desembolso que requiere su adquisición, pero no me parece caro teniendo en cuenta su practicidad y durabilidad; adjetivo que comparte a mi parecer con toda la familia Premier. Yo he adquirido también el Chef 23,5 cm. y el Santoku 18 cm.; y estoy enamorado de todos ellos. Ya estoy ahorrando para completar la familia Premier.
