Use
The Nakiri knife (which translates as ‘vegetable knife‘) is designed for cutting vegetables, like the Usuba knife, but lighter.
The Nakiri knife is very comfortable for cutting vegetables by design: it lets you make quick movements resting the knuckles of the hand holding the food, while the knuckles of the knife hand never touch the board thanks to the blade width.
The blade
This knife stands out for a manufacturing process that uses the latest advances in aeronautical technology. Its blade, made from two types of steel joined by a copper-brazing process, gives it a unique style. The two steels used are:
- On the spine (satin area) the steel is SUS420J2
- On the edge (polished area) the steel is extremely hard VG-Max (61±1 HRC)
The handle
The handle is figured Pakkawood which, together with the two blade steels, creates a piece that fuses the high quality of its components with a spectacular design.
