Description
The KAI MGC-0400 paring knife, with a 9 cm blade, from the Seki Magoroku Composite line.
Use
Thanks to its small size it is ideal for peeling all kinds of fruit, vegetables and tubers.
The blade
This knife stands out for a manufacturing process that uses the latest advances in aeronautical technology. Its blade, made from two types of steel joined by a copper-brazing process, gives it a unique style. The two steels used are:
- On the spine (satin area) the steel is SUS420J2
- On the edge (polished area) the steel is extremely hard VG-Max (61±1 HRC)
The handle
The handle is figured Pakkawood which, together with the two blade steels, creates a piece that fuses the high quality of its components with a spectacular design.
