Use
The Santoku knife is the Japanese equivalent of our cook’s or chef’s knife. Santoku means ‘three good things’ or ‘three virtues’ — slicing, dicing and mincing. Ideal for cutting meat, fish and vegetables. Its wide blade makes it handy as a spatula to scoop up what you have cut. It is a kitchen essential.
The blade
This knife stands out for a manufacturing process that uses the latest advances in aeronautical technology. Its blade, made from two types of steel joined by a copper-brazing process, gives it a unique style. The two steels used are:
- On the spine (satin area) the steel is SUS420J2
- On the edge (polished area) the steel is extremely hard VG-Max (61±1 HRC)
The handle
The handle is figured Pakkawood which, together with the two blade steels, creates a piece that fuses the high quality of its components with a spectacular design.
