Description
Granton-edge Santoku knife, 17 cm (6.5″) blade, model 1565, from the 3 Claveles Forgé series, with a hot-forged blade in molybdenum-vanadium stainless steel, a semi-matte polished finish and a black POM (polyoxymethylene) handle riveted to the tang.

The bolster — the thickest area between blade and handle — shows the knife is forged and, through its weight, keeps the knife sitting optimally and securely in the hand, adding balance.
The handle, made of POM (polyoxymethylene), is highly resistant both mechanically and to abrasion, heat and knocks,
The full tang , or spine, gives it greater robustness, the blade being a single piece with the two handle scales riveted on.
The hollows, or Granton scallops, along the blade stop the cut material from sticking to it.
This knife comes in a case and is dishwasher-safe.
Uses:
The Santoku knife is the Japanese equivalent of our cook’s or chef’s knife. Santoku means ‘three good things’ or ‘three virtues’, namely slicing, chopping and dicing. Ideal for cutting meat, fish and vegetables. The width of its blade makes it handy as a scoop for gathering up what you have cut. It is an essential tool in any kitchen.
