What is Damascus steel?

Damascus steel is made by forging layers of different steels, which are folded repeatedly to form the patterns that characterize this steel, as can be seen on the blade of this knife from the Shun Damasco series by Japanese knife maker KAI.

It’s a steel highly valued for its beauty, its hardness, and for combining the characteristics of the steels it’s made from.
