It is ideal for cutting meat, fish and vegetables. The width of its blade makes it handy to use as a scoop to gather up what you have just cut. It is a basic tool in any kitchen.
The blade
The KAI Shun Premier Tim Malzer knives are forged by the master smiths of the Japanese city of Seki in 32-layer Damascus steel, with a hand-hammered finish known as Tsuchime.

The core of the blade is VG-MAX steel, with a hardness rating of 61±1 HRC.
