Description
Set of two natural-stone Iberian sharpeners from A Pedra Das Meigas, with pressed-wood handles for water sharpening, 24×2.5×2.8 cm, supplied in a blister.
Being semicircular, each sharpener touches the edge at a single point — ideal for fast sharpening and for knives and cutting pieces with curved or scythe-shaped edges, while its shape lets it sharpen the whole edge.
The 21203 set is made up of the refining (1200) and polishing (4000, estimated) grits; the role of each is engraved on its handle (Refining, Polishing). This grit combination lets you quickly restore the edge with the 1200 stone — ideal for most kitchen tasks — and then refine it with the 4000 stone for more delicate work such as filleting. Their size means they fit neatly in the cutlery drawer.
Always sharpen with water — never with oil.
These are natural stones and must be used wet, with water, never oil: oil would clog them and, over time, render them unusable.
How to use
1. Refining
Use the coarser stone marked ‘Refining’, wet with water, in a back-and-forth motion on each face of the edge.
2. Polishing
Then use the finer stone marked ‘Polishing’ the same way to finish the edge.
Tip
To extend the life of the stones, use the edges for the coarsest work and then refine the edge more precisely on the flat faces.
Maintenance
Simply let the sharpening stones dry after use and store them in their original packaging.
Resurfacing the faces
Place a sheet of coarse-grit sandpaper (for example 40/60) on a flat surface and slide the stone over it, wet, with water.
