The blade of the KAI Shun Nagare paring knife
The dual-core blade of the KAI Shun Nagare range is made by the Japanese brand KAI following an innovative forging process, blending two steels with different properties across 72 layers: VG-2, which is flexible and tough, and VG-10, which is especially hard, giving a hardness of 61 (±1) HRC.
The blades have a Western edge, sharpened on both sides. Their cutting quality lasts thanks to the hardness of the steel.
The handle of the KAI Shun Nagare paring knife
The ergonomic handle of the Shun Nagare series has a soft, slightly curved design. The forged section of the handle adds stability and balance thanks to the optimal counterweight to the blade.
