The KAI Seki Magoroku Kaname AE-5501 is a 15 cm Japanese kiritsuke knife that unites the elegance of a yanagiba with the versatility of an usuba in a single all-purpose blade. Part of the Seki Magoroku Kaname line, it is a modern, everyday chef’s knife shaped in the traditional kiritsuke profile, ideal for fish, meat and vegetables alike.
Its blade is made of 3-layer VGXeos steel, a clad construction that keeps a hard, keen cutting core protected by tougher outer layers for an edge that stays sharp and resists chipping. The hexagonal Pakkawood handle is comfortable and moisture-resistant, and — unlike the single-bevel traditional Japanese knives — this symmetric grind is suitable for both right- and left-handers.
