Description
The KAI Seki Magoroku Kaname AE-5500 is a 12 cm Japanese kiritsuke knife that blends the elegance of a yanagiba with the versatility of an usuba in a compact, agile blade. From the Seki Magoroku Kaname line, it is a modern everyday knife in the traditional kiritsuke profile — nimble enough for detail work yet versatile across fish, meat and vegetables.
Its blade is made of 3-layer VGXeos steel, a clad construction with a hard, keen cutting core protected by tougher outer layers, for a sharp edge that resists chipping. The hexagonal Pakkawood handle is comfortable and moisture-resistant, and its symmetric grind is suitable for both right- and left-handers.
Why choose the KAI Kaname AE-5500 kiritsuke?
Because its shorter 12 cm blade brings the precision of the angled kiritsuke tip to smaller tasks — trimming, slicing and detailed preparation — while keeping the clean, flat edge that makes push-cutting so effortless. It is the perfect partner to a larger chef’s or santoku knife.
With a 12.4 cm blade, a maximum width of 3.3 cm, a 10.5 cm handle and a total length of 24 cm, it weighs just 76 g and is light and precise in the hand. Suitable for right- and left-handed users. The knife is supplied in a presentation box and carries a 10-year warranty against manufacturing defects.
