The blade
The KAI Shun Premier Tim Malzer knives are forged by the master smiths of the Japanese city of Seki in 32-layer Damascus steel, with a hand-hammered finish known as Tsuchime.

The core of the blade is VG-MAX steel, with a hardness rating of 61±1 HRC.

En mi trabajo tengo buenos cuchillos, pero el Kai Shun Premier está claramente por encima.
La dureza de su acero se nota en cuanto coges el cuchillo.
El agarre, aunque pueda parecer lo contrario al ser un mango de madera muy liso y buen acabado, es fantástico. Es más grueso de lo que parece en las fotos. Tengo manos grandes y el agarre es perfecto.
A parte, el equilibrio es muy bueno. El reparto entre la hoja y el mango es perfecto, dando esa sensación de ligereza justa para sentirlo en la mano pero que no se haga demasiado ligero ni pesado.
Y tengo que decir que no he visto un cuchillo así de afilado en mi vida.
Afilo cuchillos a diario, pero la dureza superlativa de este acero permite un afilado impensable en cuchillos de aceros más blandos.
Aconsejo tomarse muy en serio la seguridad a la hora de trabajar con él (con éste y con cualquier cuchillo). Corta mucho.
En cuanto al acabado, es exquisito. Si lo cuidas, es un cuchillo para toda la vida (en la cocina).
