Description
The KAI Shun Damascus DM-0710 is a 15 cm Japanese boning knife from the iconic Shun Damascus series. Its narrow, pointed blade is designed to work close to the bone, separating meat cleanly and removing joints, sinew and skin with control and minimal waste.
The blade is forged in 32-layer Damascus with an exposed core in VG-MAX steel, a premium Japanese alloy that reaches a hardness of HRc 61 ±1 Rockwell. This gives it an extremely sharp, durable edge for precise boning work. The asymmetric D-shaped handle, made of stabilised black Pakkawood, offers a firm, moisture-resistant grip even with wet hands.

With a 15 cm blade, a maximum width of 2.4 cm, a 12.2 cm handle and a total length of 28.7 cm, it weighs 155 g and is well balanced for detailed cutting. The handle is designed for right-handers (asymmetric section). The knife is supplied in a presentation box and carries a 10-year warranty against manufacturing defects. The HRc 61 ±1 hardness of its VG-MAX core is best maintained with Japanese water stones.
