The KAI Shun Damascus DM-0771 is a 20 cm Japanese kiritsuke knife that blends the elegance of a yanagiba slice with the versatility of an usuba. Traditionally reserved for high-ranking chefs in Japan, this model from the iconic Shun Damascus series delivers absolute precision when cutting fish, vegetables, fruit and fine boning work.

Its blade is forged in 32-layer Damascus with an exposed core in VG-MAX steel, a premium Japanese alloy that reaches a hardness of HRc 61 ±1 Rockwell. This construction guarantees an extraordinarily sharp edge and edge retention far superior to conventional stainless steels. The asymmetric D-shaped handle, made of stabilised black Pakkawood, offers a firm, moisture-resistant grip for heavy use.

Why choose the KAI Shun DM-0771 20 cm kiritsuke?

Because it is the ultimate hybrid tool for the chef who wants a single knife able to fillet sashimi, julienne vegetables and make precision cuts without switching blades. The kiritsuke’s characteristic angled tip allows detailed work impossible with a Western chef’s knife, while its 20 cm blade gives the length needed to glide through thin, single-stroke slices.

With a 20 cm blade, a 12.5 cm handle and a weight of 214 g, it offers an ideal balance between control and authority on the board. Handle designed for right-handers (asymmetric section). The knife is supplied in a presentation box and carries a 10-year warranty against manufacturing defects.

Keeping the Damascus kiritsuke edge in shape

The HRc 61 ±1 hardness of its VG-MAX core calls for careful sharpening with Japanese water stones. We recommend the KAI DM-0400 Shun stone in 1000/4000 grit to keep its edge in top condition, and the KAI CK-M magnetic sheath (24×6 cm) to protect it in storage or transport.

If you are after the same model in a more compact format, discover the KAI DM-0777 15 cm kiritsuke, or explore the full KAI Shun Damascus collection. Bring high-end Japanese cuisine to your kitchen and discover why professional chefs choose the kiritsuke as their master piece.
